SERASÉ, the Korean fine-dining restaurant at Paradise City, will present an autumn seasonal menu developed in collaboration with Chef Kang Min-goo of Mingles, a Michelin three-star restaurant, through November 30.
The menu, themed "Autumn Harvests from the Forest, Fields and Earth," was developed jointly by Paradise's food and beverage R&D center, Culinary Lab by Paradise, Chef Kang Min-goo and SERASÉ Chef Jin Seon-ju. It combines seasonal autumn ingredients—including mushrooms such as meokbeoseot, neungi and chamsongi, as well as burdock, red potatoes, pomegranates, sweet persimmons, pears and figs—with traditional fermented sauces and modern cooking techniques.
The signature dish, "Abalone with Ginkgo Nuts and Chestnuts," features seasonal abalone served with fresh chestnuts, Arijin black wheat and black glutinous barley rice. Other offerings include "Braised Hairtail with Clear Mushroom Broth," made with domestic hairtail and five varieties of mushrooms; a lobster dish; and grilled Korean beef tenderloin served with neungi mushroom sauce.
Lunch is available through four courses—Soye and Nabit—while dinner is offered through Saenan and Raon. Every course includes SERASÉ's signature dish, "Suwon-style Grilled Galbi and Naengmyeon Table," and concludes with Mont Blanc, buckwheat ice cream, traditional sweets and tea.
A Paradise representative said, "We will offer the pleasure of fine dining inspired by the harvest season through dishes that bring out the natural flavors of autumn's seasonal ingredients."
