As you step into the signature rooftop bar at Fairmont Ambassador Seoul, an all-white AI robot bartender named Mari moves busily between rows of colorful cocktails lined up along the counter. Recognizing each guest’s order and preferences, Mari repeatedly shakes the mixer and finishes the drinks, creating a scene rarely found in traditional hotel bars.
AI robot debuts as a welcome-drink maker

According to the hotel industry on the 8th, Fairmont Ambassador Seoul has launched the "AI Meets M29" promotion to mark its fifth anniversary. It is an AI collaboration program in which hotel bartenders complete cocktails based on concepts and recipes planned and proposed by AI. Rather than a technology-focused demonstration, the promotion centers on turning AI-generated ideas into real hotel experiences.
All five signature cocktails unveiled through this promotion were named and conceptually designed by AI. The hotel explained that they symbolically capture Fairmont Seoul’s past five years, the rhythm of Yeouido, and the future direction the hotel aims for, reflecting both the space and the purpose of the promotion.

The lineup includes Red Genesis, Foggy Yeouido, Sunset Glow, Iron & Soul, and The Eternal 5.
These concepts are not just written descriptions; they are fully reflected in the course structure and overall presentation. Starting from the initial ideas proposed by AI, hotel bartenders adjusted the choice of ingredients, balance of flavors, and style of expression to complete each cocktail. As guests move through the menu, it naturally reveals how the "direction set by AI" and the "results refined by human senses" intersect.
From sunset to fog: Yeouido’s landscape captured in a single course

Once the course begins, the cocktails unfold like a series of scenes. The welcome drink, Red Genesis, is served as a vivid red jelly shot that immediately catches the eye, symbolizing the birth of Fairmont. When paired with a strawberry ricotta crostini, the cocktail’s floral aroma and bright acidity meet the crostini’s creamy texture, creating a clear contrast in flavors.
Next comes Foggy Yeouido, where a mist effect envelops the glass as gentle herbal notes spread, evoking the stillness of the Han River at dawn. The botanical character of the gin cuts through the rich, oily flavor of smoked salmon, allowing the visual presentation and flavor progression to flow seamlessly together.
Sunset Glow, which is completed with guest participation, turns a yellow cocktail into a shade of purple the moment color is added, creating a scene reminiscent of Yeouido’s sunset. Paired with scallop ceviche served with yuzu soy sauce, the citrusy acidity and umami become more pronounced. Inspired by the bold structure of Parc One, Iron & Soul fills the space with smoke and instantly shifts the mood. The weighty body of the whisky and the earthy notes of truffle beef tartare come together to form the most mature pairing. Finally, the dessert cocktail The Eternal 5 layers the bitterness of espresso with the softness of mascarpone cheese foam, bringing the course to a close.

One notable feature of "AI Meets M29" is that each cocktail is accompanied by a separate "Refined recipe." AI first proposes the concept and initial recipe based on customer data and trends. Hotel bartenders then rework it, taking into account the actual service environment, flavor balance, and guest feedback. For example, when champagne was turned into a jelly shot, they judged that it limited the expression of its aroma, or that a combination of herbs and cacao could become overly floral, and adjusted the base spirits and ingredients accordingly. They also replaced hard-to-source ingredients with realistic alternatives and removed certain components to better balance sweetness and acidity. In other words, AI sets the direction, while humans turn it into a "drinkable experience." The resulting cocktails show how human judgment and sensory input can enhance AI-generated ideas, illustrating one way technology and hospitality can collaborate.
From convenience stores to hotel bars: AI use spreads

Just as humanoid robots are now being deployed for in-store tasks in the convenience store industry, the hotel industry is also seeing wider use of AI. During this promotion, AI robot bartender Mari joins as a guest bartender, performing collaborative shows with the hotel’s bartenders. Guests can watch in person as AI and humans work together to complete cocktails. The program runs daily from 5:30 p.m. to 10 p.m. from today through the 28th, and is limited to about 20 to 25 guests per day.
A Fairmont Seoul representative said, "This project is the result of a collaboration in which hotel staff turned AI-generated ideas into real experiences, marking a first in the hotel industry," adding, "We will continue to use technology not just as a tool, but as a way to expand Fairmont Seoul’s unique sensibility and guest experience."
